1 pkg of frozen peppers with onions (thawed)
1 lb pkg Keilbasa
1 pkg of Simply Potatoes cubed potatoes
3-4 pkgs of boil-n-bag rice(1 serving size bags,depending on amount of ppl being served)
1 2 cup pkg of cheese(i like using sharp cheddar or pepper jack)




put 2 tbs of oil in a skillet on medium heat and add potatoes when oil gets hot.Occasionally stir potatoes.

After the potatoes are starting to brown on outside add the bag of peppers w/onions and let cook until water that is released from peppers is gone and peppers/onions are starting to brown on edges(dont forget to occasionally stir them).While pepper/onion/potato mixture is cooking,slice keilbasa crossways into "coins",then slice in half so now they are not too small and not too big.when mixture in pan has browned on edges add keilbasa and stir every couple of minutes until meat has also cooked.put temp on low and cover with lid.Boil amount of water suggested on box of B-I-B rice and add rice.when rice is finished pour 1 bag of rice on plate and layer it evenly across plate.Add meat/potato/vegetable mixture on top of rice,then cover with cheese.Microwave plate for approx. 15-20 seconds to melt cheese and then serve.this meal is very filling and so not everyone may be able to finish thier plate.
