Pumpkin Bisque

1/2 cup diced onion
1/2 cup diced celery
2 tablespoons butter
1/2 cup minced scallion
2 cups cooked pumpkin
1 quart chicken stock
2 tablespoons lemon juice
1 tablespoon maple syrup
1 tablespoon fresh rosemary
1 teaspoon fresh thyme
salt and pepper to taste
1 tablespoon corn starch
1/2 cup half & half




Sauté onion and celery in the butter until transparent. Add scallions, pumpkin and chicken stock. Bring to a boil and simmer. Add lemon juice, maple syrup, rosemary, and thyme. Add salt and pepper to taste.

Combine corn starch and half & half until smooth. Whisk into simmering soup. Will thicken slightly.
