Italian Chocolate Chip Cookies

4 eggs
1 cup sugar (caster or superfine)
1 teaspoon vanilla
4 Tablespoons Dutch processed CoCoa
1 1/2 Tablespoons Saigon Cinnamon
1/2 teaspoon cloves
1 stick soft butter
4 cups AP Flour
4 teaspoons Baking Powder
1 small bag mini chocolate chips




Pre-Heat Oven 350 degrees

Beat eggs and vanilla

Sift sugar, cocoa and spices;add to egg/vanilla mixture;

add soft butter and mix until blended;

Sift flour and baking powder;

add one cup at a time until all 4 cups have been incorporated (the dough becomes quite dense and the 4th cup can be mixed by hand if you do not have a heavy duty mixer)

Add Chocolate chips by hand

Roll each cookie into a ball the size of a walnut

Place on an ungreased cookie sheet (or you can line with Parchment paper)

Bake 8-10 minutes

Place on wire rack

Dip in your favorite Confectioners Icing while slightly warm.
