Esther's Potato Goulash

1 lb. lean ground beef
2 lbs. white potatoes
1 16oz. bag frozen mixed vegetables, thawed
2 T. butter
1/4 to 1/2 c. milk




Brown the ground beef in a nonstick skillet and drain.

In the meantime peel and cut potatoes into chunks. Boil the potatoes about 20 minutes, or until soft enough to mash. Drain the potatoes and mash with the butter and enough milk to reach desired consistency.

Preheat oven to 350 degrees and spray a 2 quart casserole with cooking spray. Combine the mashed potatoes with the cooked ground beef and thawed vegetables. Spoon into the casserole dish and smooth the top. If desired top with grated cheese or breadcrumbs. Bake covered 20 minutes, then uncovered 10 minutes. Serve with butter, salt and pepper.
