Easy Bologna and egg spread

INGREDIENTS


1/4 inch piece all beef bologna (from service deli)
6-8 hard boiled eggs
salt and pepper to taste
3 Tbl. Mayonnaise
1 teaspoon reg. mustard or dijon
2 green onions thinly sliced whites only (optional)
1/2 jalapeno finely chopped (optional)

 

 

DIRECTIONS


Boil eggs until hard boiled and put ice water on them for quick chilling and peel. Mince bologna then chop eggs in same bowl. Salt & pepper to


taste. Add mayo then mustard on top and mix. Should look like deviled eggs. Add the onions & jalapenos in the mix or just put them on top, or don't add them at all. Cut bread in shapes, any kind of cracker or chips go well. Fast and easy for a football dip or spread, or for just a sandwich.
