Ditilini & Ceci Soup

INGREDIENTS


1/2 large onion finely diced
1 cube vegetable broth
1 lb box Ditilini pasta
2- 15 oz. cans stewed tomatoes
2- 15 oz. cans Ceci
4-5 stems Parsley or 1- heaping T. of dried Parsley
Salt to season
Soy sauce to season
1/2 c.  macaroni cheese, grated

 

 

DIRECTIONS


Saute onions in olive oil

Dissolve veggie cube in cup of hot water

Cook Ditilini in salted water, DO NOT DRAIN WATER

Add sauted onions, broth, stewed tomatoes, ceci, approximately 8 -10 minutes before pasta is cooked.

Add soy sauce and parsley and stir just before removing from heat.

Serve in a soup bowl with a sprinkle of cheese on top.
