INGREDIENTS


2 cups sugar(can use less), 1 cup margarine, softened, 6 eggs, 2 cups flour, 1 tsp. vanilla extract, 4 tsp lemon extract, 16 oz. candied cherries and pineapple, 1 cup pecans,chopped, 2 Tbsp.flour,
Glaze:

1/4 cup margarine, 1/2 cup lemon juice, 1/2 Tbsp lemon rind

 

 

DIRECTIONS


Combine sugar and margarine: Cream well and add eggs, flour & extracts: mix thoroughly: add fruits & nuts that have been dredged in flour. Pour into lightly greased tube or bundt pan. Bake at 325 for 1 hour. Cool cake for 8 minutes. Pierce the surface of the cake with a fork. Pour glaze over cake. Cool before cutting.


GLAZE: Combine all ingredients in saucepan. Heat until sugar dissolves

Yield: 16 Servings
