Aussie Eastern-Styled Potatoes

INGREDIENTS

 

6 potatoes, peeled and cubed
1 onion, chopped
2 garlic cloves, crushed
1/2 cup black olives
1 -2 tablespoon olive oil
1 tablespoon cumin powder
1 pinch salt
1 pinch pepper

 

DIRECTIONS

 

1 In a non-stick skillet over medium heat, add oil and potatoes. Cook until the pototoes are almost done - not quite fork tender. Actual cooking time will depend on the size of your cubes.
2 Add the onions, garlic and cumin and continue cooking until potatoes are fully cooked and the onions are soft with a bit of color.
3 Add olives and continue cooking until they are warm. Season to taste with salt and pepper.
4 You can serve this as a side dish or as a vegetarian/vegan entree.
